All Soup begin with a Mirepoix
Combine and sautéed the mirepoix, then add some broth to simmer and soften, then add roasted pumpkin with spices and cover to simmer for another 15 minutes, now add all ingredients and let simmer for 15 more minutes. When looking like it’s breaking done blend to purée the soup. And place back in pot to simmer another 15 adding stock if it looks too thick.
